Recently I have been consulting with a nutrition specialist. I am (Ugh Umm) at a certain age where I need to be more conscious of my eating habits. Long gone are those days where I can eat whatever I want and not see an immediate impact on my weight, blood sugar and blood pressure.

Okay, I admit it, this is so hard! I have to become much more aware of everything I put in my mouth. Spontaneity is in my nature. Frequently, food follows the same pattern. I will grab that doughnut or whatever just because it’s there, then of course, at the end of the day I look back and realized I have consumed so much more than I should have.

So this is my public contract! I hereby swear to try to choose healthier options. Planning is everything! Fortunately for me, I work at the best Farm Market ever! And let’s face it, if I am going to try to eat better this is a great season to retrain my brain. All those fruits and vegetables are just starting to come into season. Pick your own at Linvilla is now open so the choices are growing (pun intended) every day.  So join me on my journey of becoming a healthier me.

This week I will share my favorite Strawberry Salsa recipe,

Strawberry Salsa

2 Tbs. olive oil
2 Tbs. lime juice
2 Tbs. red wine vinegar
2 Tbs. fresh chopped mint leaves
2-3 Tbs. fresh chopped cilantro
1 jalapeno pepper, seeded and minced
1/4 tsp. salt
1 pint strawberries, hulled and chopped
1/4 C. diced pineapple
1/2 C. chopped sweet onion

1.    Combine olive oil, lime juice, vinegar, mint, cilantro, jalapeno, pepper and salt in medium bowl

2.    Toss in strawberries, pineapple and onion

3.    Serve with chicken or anything else!
